A delicious starter or quick and easy light lunch option.

Tuna Tapenade Served with Crostini

 

TUNA TAPANADE INGREDIENTS 

• 2 heaped tablespoons Pukara Estate black olive tapenade

• 2 tablespoons Pukara Estate lime extra virgin olive oil

• 2 teaspoons Pukara Estate white balsamic vinegar

• 2 (95g) cans tuna, in springwater, drained

• 1 teaspoon Pukara Estate pepper and olive smoked salt flakes

METHOD 

Drain the tuna but do not rinse. Flake the tuna with a fork.

In a medium serving bowl gently blend tapenade, oil, vinegar & tuna with a fork. Season with salt to taste.

Serve with Crostini.

CROSTINI RECIPE INGREDIENTS 

• 1 small baguette

• 2 tablespoons Pukara Estate lime extra virgin olive oil

• Pukara Estate pepper and olive smoked salt flakes

METHOD 

Preheat the oven to 180 degrees C.

Slice the baguette, on the bias, into thin slices and arrange on a lined baking tray.

Lightly drizzle 1 side of bread slices with the oil, sprinkle with salt flakes and bake until golden brown, about 8 to 10 minutes.

Makes: about 6 slices

Serves: 2 for light meal, 6 as entrée, about 1 cup of Tuna Tapanade.

Cook time: 10 minutes

Total Time: 20 minutes
