  •  300 g (10.6 oz) plain Madeira cake crumbs
  • 1/4 cup of Milk Chocolate Powder
  • 1/4 cup warm sieved Feijoa Jam
  • 2 tbsp dark rum
  • 1 tbsp water
  • 1/2 cup chocolate sprinkles
  • 180 g (6.4 oz) melted white chocolate
  • 4 red and 4 green glacéd cherries
  • 1 tbsp jam extra


Mix crumbs with sifted chocolate powder in a bowl. Combine jam, rum and water and then stir into crumb mixture. Take one level tbsp of mixture and roll into a ball and repeat until all of the mixture is used. Brush the extra jam onto the balls and then roll in chocolate sprinkles until covered completely. Refrigerate balls until firm, approximately 1 hour. Chop the green cherries into wedges and the red cherries into small irregular pieces. Place the balls into truffle cases (optional) and drizzle with white chocolate. Decorate with cherries before the chocolate sets. Makes 12-14.
